I just found a website called Theatre Australia which lists the productions (shows) happening around Australia in some of the smaller theatres (it doesn't include the major ones). Here is their list of all productions, but you can also search by day, week, month, town, state, etc.
I can't find one website which lists all major theatre productions around the country. For these, I'd suggest Googling for "theatre {insert your town, city or state}" which will, hopefully, list your local choices. If anyone knows of a website which lists ALL of Australia's major theatre productions, please let me know and I'll add it in here. :thumbsup:
There's also a site called Entertain Oz which lists lots of events, again with a choice of criteria for which to search, including:

Then, of course, there's always Ticketek for many events around the country.
